I recently had multiple opportunities to create and share an appetizer, and I knew what my first priority was: Fine Cooking's Greek Salad Skewers. I have tweaked the recipe a bit, making it even faster and easier to make. Plus, I like the cool, light, and refreshing nature of these bites without oil.

Since I am getting my wisdom teeth out tomorrow morning, you best believe I will living off of these and Green Monsters (coming soon!) for the next few days. This recipe is inspired by Oh She Glows' Clementine Creamsicle Smoothie. This smoothie is so thick, creamy, and refreshing...it will blow your mind. And you would never guess it has avocado in it!
This is a phenomenal recipe from Fitness Magazine that I have made many times, and has been a hit with both my family and my college roomates. It is ridiculously full of Omega-3s which have many benefits for you heart, hair, nails, and skin. Don't like fish or want to make it vegan? The salad alone is delicious and if you'd like some protein you could probably substitute tofu.
I am so excited to start this blog and be able to share wonderful recipes with all of you. Here's the catch, I'm at home on Spring Break and of course I forgot my camera...so this blog won't get into full swing until next week.
